A native of Germany, Eaton Hotel’s Executive Chef, Hans Wergin, has more than 25 years experience in the hotel and restaurant business including positions in Australia, Switzerland, Germany, Saudi Arabia, the Philippines, Thailand, China and Hong Kong.
Chef Hans believes in bringing healthy cuisine into everyone’s daily diet, yet making it a truly culinary experience.
“I’d like to introduce healthier, lighter, seasonal, innovative, fresh, comfortable and organic food. I want Eaton to be known as having the best breakfast buffet in town. People tend to forget about breakfast, but I believed it is the most important meal of the day, and I’d like to encourage guests to start their day in a healthy and nutritious way.”
Chef Hans integrates his Continental health food concepts with local and traditional Chinese and Asian ingredients, creating a perfect “yin yang” balance in the dishes that guests at Eaton Hotel can heartily enjoy without worrying the calories or cholesterols.
To cater for guests with different needs, Hans is an expert in creating tailor-made cuisine to meet their likings and even requirements. For example, he would add dishes on the menu which serve guests who have specific dietary requirements like gluten intolerance or on a low-carb diet.
A long time resident in Asia, Hans values the local way of cooking – fresh food cooked on the wok. “I enjoy the absolute freshness of the ingredients which are used in Asian cuisine. Whenever I visit a local wet market it is always an experience that I enjoy and gives me creative ideas for my menus.“
Chef Hans has a diverse background, including positions in hotels and private clubs in Hong Kong such as the Holiday Inn and Pacific Club, to world class five star hotels such as Brisbane Sheraton Hotel and the Shangri-la Bangkok.
